Wild Mushroom Tartlets / Recipe
Autumn is definitely hammering the UK at the moment with these freak rain showers & crazy winds. And there's nothing quite comforting as a good old fashioned tart. Wild mushrooms are so commercial to buy now all you need to do is pop in your local supermarket & they're everywhere. So why not branch out and try these new exciting ingredients (they also make you look dead fancy to friends and family!!) This recipe called for a mix of wild mushrooms so i chose shiitake & chestnut, but you can pick whatever kind you like. This recipe is super easy && you'll have it all done in 30 minutes. Perfect i know right? These are also perfect for entertaining guests.
What you'll need:
300g all butter puff pasty
25g butter
flour, for dusting
150g chestnut mushrooms, sliced
150g shiitake mushrooms, sliced
25g parmesan, grated
handful parsley leaves, chopped
1 garlic clove, finely chopped
1 egg, beaten
Recipe:
1// Roll pastry onto floured surface and roll out to ½ cm thick. Cut four 15cm circles. Leave to chill on lined baking tray in fridge.
2// Preheat oven to 200c/gas 6. Then pop a pan on a medium/high heat until hot and add the butter & fry the sliced mushrooms.
3// Fry the mushrooms for around 5 minutes or until there is no liquid left in the pan. Season the mushrooms and remove from the heat.
5// Take the pastry from the fridge & score a 1cm border around the edge & place the mushroom mixture in the middle ( be quite generous as the pastry will puff up around it
6// Brush the edges with the beaten egg & cook for around 15 minutes until golden and puffed up. Serve immediately.
These went down an absolute storm and they're perfect portion sizes to feed four people. I didn't get time to serve them with anything as my family was eager to try them!!! They would be perfect for serving to guests ofr something warm to have on these cosy autumn days.
