Fruit Scone / Recipe

I love using a super simple recipe for something so delicious. Something like scones are so easy to whip up in a little amount of time and are scrummy to have any time of day. I do usually find when I make scones they never last more than a few days as everyone loves them so I do make these quite often. Fruit scones are super simple and you can try loads of different things in them. We always stick to a classic of raisins but another favourite is dried apricot which is so gorgeous!! So if you don't like currents in your scones you can have free reign of what kinda fruit you'd like to add.

What you'll need:
225g Self Raising Flour
30g Caster Sugar
75g Unsalted Butter
50g Dry Fruit (Currents)
1 Egg
50ml Milk, extra for wash
½tsp Salt
Recipe:
1// Preheat oven on 200c/Gas mark 6. Line a baking tray with greaseproof paper.
2// Place flour, salt and sugar in a bowl. Add butter and rub into flour with your fingers until resembles breadcrumbs.
3// Stir in dry fruit and add beaten egg and milk. Mix by hand until fully combined
4// Either use a cookie cutter or roll by hand. I prefer splitting the mix into eight and rolling out 8 even scones.
5// Place scones on a baking tray, lightly wash with egg/milk mixture and bake for 12/15 minutes or until risen and golden.
Leave them to cool if serving with cream or enjoy these warm! If kept in a Tupperware box these can last up to a few days. Unfortunately we never get to that point because they're usually eaten so quickly in our house!!!
