Tangy Lemon Mousse / Recipe
Summer has finally hit the UK and we're having the most gorgeous heat wave. With the heat nobody wants heavy meals or anything too dense to eat - yes us brits really struggle that much against the heat. So for the past couple of weeks I'm been getting experimental in the kitchen to find some quick and easy deserts that you can make that day or the night before.
These deserts are perfect if you've got friends round, especially this tangy lemon mousse - it's a crowd pleaser. This is perfect for kids and for the adults as it's the perfect palette cleanser after a hot summers BBQ. With only three ingredients in it, it's probably the easiest thing I've ever made and it's pretty much fool proof if you're not very skilled in the kitchen!!!
What you'll need;
½ cup lemon curd
1 cup cold heavy whipping cream
¼ cup powdered sugar
food mixer & whisk attachment
1//So the first thing you're gonna want to do once all your ingredients are measured out correctly is to add them into your stand mixer. Once everything is in, whip all of the ingredients until stiff. I waited about 5 minutes on a medium speed to get the perfect consistency for mine.
2//Take the attachment out of the mixer and divide the mixture between four glasses. Smooth the top of each mixture and cover with plastic wrap. Chill in the fridge for 4-6 hours so they are set.
Before serving I liked to add a few slices of lemon to each mousse. There you go; the easiest lemon mousse you'll ever make. Obviously you can tweek this recipe to whatever you like, if you want more of a sharp lemon flavour just add a little juice!! This goes down an absolute treat in my household and it's so cooling && refreshing I like to make these every few weeks.
