Vegetable Balti / Recipe

I love making a big batch of warm food and freezing it for the winter months. Something with a little spice and something that looks fancy but is a bit easier to cook. A curry is perfect for this time of year as it's so warming and cosy. This is a super healthy vegetable baltic that's high in fibre & vitamins with low fat. It's perfect for veggies and meat lovers alike, something everyone will love. It looks like a lot of ingredients but it's one of those 'throw everything in a pan & cook' recipes so don't think you're going to be slaving away over this. You can freeze this for the future months or serve it up for the whole family to enjoy!

What you'll need:
350g cauliflower florets
1 white onion, sliced
1 large potato, cubed
50g frozen garden pees
1/2 turnip, cubed
1tbsp oil
1 garlic cloved, crushed
400g chopped tomato
baltic sauce
3 carrots, sliced
2 tbsp chopped coriander


Recipe:
1// Heat oil in pain and add onion & garlic and fry until the onions are soft. Once soft stir in the balti sauce.
2// Put fresh vegetables in pan, add chopped tomatoes & coriander. Bring to the boil then turn heat low and cook for 30 minutes with lid on.
3// Remove lid & add peas. Cook for a further 20 minutes until vegetables are soft & sauce has reduced. Season with salt and pepper.
4// Ladle curry into bowls, drizzle raita sauce over & sprinkle with coriander. Serve with remaining raita & serve with warm naan/poppadoms.
It really does not take a lot of effort with this recipe ( i can feel there's a running theme here with the recipes i've been posting lately). Honestly you'll love this, the kids will love it & the neighbour down the street will love it. You can kind of mix and match the vegetables you put in to what you prefer but i find this is the perfect mix of things!Let me know what you think of the recipe & if you give it a go.
