Soup To Warm The Soul

It's getting to that part of the year where we trade sandals for wellies, summer dresses for long johns underneath our clothes and salads for soups.
This was the perfect excuse to get myself in the kitchen and make some of my favourite soup. With the dark nights cutting in and it being extremely cold; especially up in Newcastle, i don't think you can beat a warm mug of homemade soup.
So i had a little flick through some recipes and I found an old one i loved. Sweet Potato & Butternut Squash soup. This is probably one of the easiest soups i've ever made and its pretty much fool proof. I thought why not share the recipe & some yummy pictures with you guys to get your in the kitchen and making it yourself.
What you're gonna need -
2 large sweet potatoes
2 large butternut squash\ seasonal squash
1 large white onion 
1 1/2 pints of vegetable stock
1 tbsp cumin
salt/ pepper to taste
1: Obviously the first thing you're gonna need to do is chop up all your vegetables. I only ended up using two of each because i couldn't find a bigger pan. Obviously you can twist this recipe to how you choose. I find if you cut it all into an inch cube, it should only take around twenty minutes to actually cook. 
 2: Then mix one stock cube (i prefer vegetable stock cubes) with 1 1/2 pints of boiling water && mix the cumin into this. A lot of recipes will tell you to soften your onions first, just throw it all into the pan! I use this recipe all the time && it hasn't failed so far. Then pour the stock over the top, put on a medium heat && simmer until all your vegetables is soft.
3: Once all your vegetables are soft separate the stock into a separate bowl. You're gonna gradually add this back in until you get the consistency you like. I like to use a hand blender for the soup, adding a ladle at a time of stock. Obviously if you like your soup chunky you can do it to how you like it.
4: Once its all blended and smooth you can eat it straight away or you can freeze it. I always find soup never lasts long in my house so it's usually consumed that day. It's also perfect to take to work && you can heat it up in a pan or in a microwave.

    1. Honestly its the easiest thing to make. And if you make loads its good to pop in the freezer then its ready whenever you want it. Especially with the colder months now!!!
